Have you ever thought about sailing Carters Lake reregulation reservoir in the summer? I was thinking that there might be a breeze late in the day from upslope or orographic convection from the afternoon sun hitting the mountain adjacent to the lake. This effect would also augment SW breezes typical in the summer. There's a launch on the North side just before the powerhouse.
I used to fly gliders using this type of convection just North of there at Chilhowee Gliderport. You could stay aloft late in the evening well after the normal flat land thermals dissipated.
There was plenty of wind in the Outer Banks last week. My new motto is I SUK* therefore I am. I was able to use an ordinary SUP with my Buggy engines go from sailing mostly downwind, to sailing across the wind and jibing to change direction.
*(Stand Up paddle Kite)
First vid is 2.9 meter kite, and about 10-12 mph wind.
Second was pretty marginal wind ~8 mph
Finally, fairly strong wind (15-20), but a smaller kite (2.5m). Didn't end as perfectly as I had planned.
Here's a copy of one of my GPS tracks. Still don't end up where I started, but the ground I lost was in the turn. I expect with more practice (I'm basically now at the level of a novice windsurfer) I can sail upwind and do much sharper turns.

Best thing is go up, scout it out and report back.
Still plenty to do on low wind days .

Note: I can do that trick where Andy falls backwards on the sail... However I look like I am going to drown while Andy appears to take a nap
